This smoothie recipe sounded good when I first read it.  It smelled even better while my wife and I were making it.  When I tried it Monday afternoon for lunch…it blew the top of my head off it was SO GOOOOOD!

Apple Pie Smoothie


½ cup unsweetened almond milk (or milk of your choice)
¼ cup rolled oats
½ cup Plain or Vanilla Greek Yogurt
1 apple, cored and roughly chopped (you can peel if preferred)
1 tablespoon peanut butter or nut/seed butter of your choice
½ teaspoon cinnamon
½ teaspoon pure vanilla extract

1. Mix almond milk, oats and Greek yogurt in a bowl.
2. Refrigerate for 1 hour.
3. Add mixture to food processor or blender with remaining ingredients.
4. Blend till combined.

We were making multiple servings so we multiplied all the ingredients by 8 except for the apples we selected 4 large Red Delicious type apples.

I take my smoothie to work for lunch, so I divided the contents up into four servings and placed them in the freezer.  Monday morning I packed my lunch putting one serving in my lunch bucket, along with an ice pack and headed off to work.  Come lunch time the smoothie melted partially where it was more like a shaved ice consistency.  I eat my smoothie by using a spoon and I’ll tell ya it was AWESOME!

I will make these again…..for sure…and again!
